CHICKEN THIGHS W/ YOGURT, APRICOT & GARAM MASALA
This is one of the easiest,
tastiest dinners on nights when I don’t have inspiration for much more. I cook
4 chicken thighs for Tony and I.
Ingredients
½ cup plain yogurt
2 tbls apricot jam
2 tsp garam masala
4 chicken thighs
Preparation
- Place chicken in a glass oven safe dish and season with salt and pepper. Whisk yogurt, jam and garam masala in a separate bowl. Pour the yogurt mixture over the chicken and stir to coat.
Served
with a healthy quinoa alongside a simple salad for a low key and delish dinner.
