BBQ Tandoori Tofu, Tabouli & Lime Corn on the Cob

Meatless Monday at the Martino house! One of my favorite days of the week.  I find it fun and challenging each Monday.  This week we had BBQ Tandoori Tofu, tofu is a great meat substitute because it is high in protein.  The tofu is coated with this incredibly aromatic blend of spices with smoked paprika, turmeric, coriander and cumin. Served with a yogurt sauce, the cool sauce is a nice contrast to the warm and spicy tofu.
Ingredients:

2 teaspoons paprika
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
3 tablespoons extra-virgin olive oil
1 tablespoon minced garlic
1 tablespoon lime juice
2 14oz. packages extra-firm tofu, drained
2/3 cup nonfat plain yogurt
6 tablespoons chopped fresh cilantro for garnish 
Preheat the grill to medium and grease it.
Place the paprika, salt, coriander, turmeric and cumin in a small bowl. After, heat the oil in a small skillet over medium heat. Sauté the garlic for 30 seconds and then add the spice mixture and lime juice. Stir well. Cook under low heat for 1 minute until the mixture sizzles and becomes fragrant. Remove from heat.

Slice the tofu block into 6 pieces. Pat them dry using paper towels. Brush both sides of the tofu slices with the spice and oil mixture and reserve the remaining spice oil.



Grill the tofu for 2-3 minutes per side or until they have grill marks.


Combine the remaining spice oil mixture, cilantro and yogurt in a small bowl. Serve tofu with the yogurt sauce.
I served the BBQ tandoori tofu with tabouli and a side of lime corn on the cob.

Tabouli Salad

What is Tabouli? It’s a Middle Eastern Recipe originated in Lebanon.
This salad is rich in vitamin C & Fiber full. Definitely it is a low fat recipe.
Ingredients:

Bulgur wheat – 1/2 cup
2 cups water
Onion – medium chopped
Parsley Leaves- 1 bunch chopped finely
Medium tomato – chopped and seeds removed
2 Medium Cucumber - chopped and seeds removed
Lemon Juice- 1 lemon medium
Olive Oil – 1 Tablespoon
Freshly ground Black pepper – 1 teaspoon
Salt – to Taste


Method

Soak bulgur wheat in 2 cups water for 1 hour till softened. Strain and place in large bowl. Toss with parsley, tomatoes, onions, cucumber and finally add pepper, lime juice, salt and olive oil and toss gently or mix with a spoon carefully to integrate all the ingredients. Let it sit for an hour in the refrigerator for more taste.






Lime Corn On The Cob

Husk and grill the corn for 5-10 minutes.  Remove Corn from BBQ and season with fresh lime, chili flakes, salt and pepper.
