CILANTRO HUMMUS

Cilantro - you either love it or hate it. But, if you love it, then this hummus recipe is for you! The smooth consistency of hummus is met with a sweet, pungent lemon flavor with a cilantro twist.


2 cups garbanzo beans, (I used dried and hydrate them but you can used canned)
1/4 cup packed fresh cilantro leaves
2 tablespoons fresh lemon juice
1 tablespoons Diced Jalapeños
1 tablespoon extra virgin olive oil
1 clove garlic, peeled
1/4 teaspoon ground cumin
1/4 teaspoon salt

If it is to dry just add more olive oil or water.

Place beans, cilantro, lemon juice, jalapeños, olive oil, garlic, cumin and salt in food processor; cover. Process until smooth. Serve with pita wedges or crackers.

Carla! That's looks alot like chopped onion in your picture with lemons and cilantro. Is it? Cause its not in the recipe. Johnny Murphy

Yes sorry John. I am not sure why I have onions in the picture they are not in the recipe. However I don't think it would hurt if you put them in.
