CHICKEN THIGHS W/ YOGURT, APRICOT & GARAM MASALA


This is one of the easiest, tastiest dinners on nights when I don’t have inspiration for much more. I cook 4 chicken thighs for Tony and I. 
Ingredients
½ cup plain yogurt
2 tbls apricot jam
2 tsp garam masala
4 chicken thighs

Preparation

  1. Place chicken in a glass oven safe dish and season with salt and pepper. Whisk yogurt, jam and garam masala in a separate bowl. Pour the yogurt mixture over the chicken and stir to coat.




Position rack in upper third of oven; preheat broiler. Place the chicken on a broiler rack and broil until browned on top, about 15 minutes. Reduce oven temperature to 400°F and bake until the chicken is juicy and just cooked through, about 15 minutes longer. (Thigh meat will appear dark pink, even when cooked through.) The meat can be flabby without the extra step to brown and crisp it.

Served with a healthy quinoa alongside a simple salad for a low key and delish dinner.
